2020 Pandemonium
For those who need a daily drinker, our 2020 Pandemonium, with its new inaugural label might be the answer! Pandemonium is easy going in its structure and mouthfeel, and packs a purple punch with rich ruby and purple colors. White jasmine and basil begin in its decadent nose, before bringing you to a bakery with swirling scents of boysenberry jelly donut, finishing with more baked spices, particularly clove, vanilla, light cinnamon spice, and fresh baked bread. The palate is pure “pandemonium”, but in the best way! Pandemonium will pair beautifully with ham or turkey, but leave out the clove and opt for more cinnamon or nutmeg in your dishes. High on our list of foods for thought with this wine include herb crusted rack of lamb with a squeeze of Meyer lemon. If you prefer a more casual feel, this wine is perfect with a pulled pork sandwich, or with a charcuterie and cheese grazing board with Marcona almonds, truffle salt, an array of soft cheeses and aged gouda. 92pts. Production notes
Sourced from Two & Company, Caelesta, and Shell Creek vineyards in Paso Robles, Pandemonium was picked at optimum ripeness as we determined by measured parameters such as brix, pH, and TA, and also its phenolic ripeness, i.e., taste. After 2 days of cold soaking, lots were again tested for brix, TA, and pH. Cold soak can last up to 7 days, during which pump-overs are performed twice a day. Fermentation usually kicks off on its own. In some cases yeast is added to assist in fermentation and in some cases it is not necessary. After roughly 25 days on the skins the wine is gently pressed into tank for 24 hours, then gravity-filled into barrels where it remains for 18 months, with monthly topping. There is no racking and minimal SO2 additions. Blending trials are done just before bottling and blending takes place shortly after.
