Production notes
Bien Nacido is one of the classic California Burgundian vineyard sites. It is in the Santa Maria Valley AVA, planted on Monterey shale and sandstone. The grapes were hand-picked and crushed by foot, then pressed after arriving at the winery. The juice settled overnight and was put into 225L barrels for fermentation (33% new).  Fermentation was native and lasted 32 days. The barrels were topped and allowed to finish through malolactic fermentation. The wine was racked for the first time after 15 months.  Bien Nacido Chardonnay was bottled unfined and unfiltered.

Cohesive aromas of apple, citrus, butter and dust show on the nose of this bottling. The palate lands broadly at first with toasted almond and apple flavors before a tart lemon peel element adds an edge.
