Production notes

All grapes were picked for acidity and direct pressed when the fruit arrived at the winery. Juice settled overnight was then barreled down to a mixture of 228L barrique and 500L puncheons. The viognier was fermented in 50% new oak. Fermentation proceeded by naturally occurring yeast and bacteria. The wine underwent 100% malolactic fermentation. The wines were aged for 15 months on the lees. The wines were bottled unfined and unfiltered in the spring of 2025.
